Ingredients: Organic black beans, organic corn, organic tomatoes, organic onions, organic cumin, organic red and green bell peppers, organic masa harina, organic ancho chile powder, organic garlic, organic cilantro.
YOU WILL NEED (4 SERVINGS):
- 6 cups unsalted or reduced sodium chicken broth or stock
- 1 pound boneless, skinless chicken breasts, cubed
- ½-¾ teaspoon sea salt, optional
DIRECTIONS:
- Remove masa harina packet; set aside.
- In large saucepan over medium heat, combine contents of package with broth and chicken.
- Bring to a boil. Reduce heat; simmer 20 minutes.
- In small bowl, whisk together masa harina packet and 1 tablespoon water. Stir into soup; simmer 5 minutes. Salt to taste. Makes 4 servings.
Serving Suggestion: Top with shredded cheese, crushed tortilla chips and sliced green onions.
